French Roasted Pork with Herbs de Provence

Ingredients:
- 500 grams Boneless pork loin
- 2 tablespoons Olive oil
- 1 tablespoon Herbs de Provence
- 3 cloves Garlic
- to taste Salt
- to taste Black Pepper
- 1 teaspoon Lemon zest
- 1 cup Low NA vegetable broth
Instructions:
- Preheat your oven to 350F (175C).
- In a small bowl, mix together the Herbs de Provence, salt, black pepper, minced garlic, lemon zest, and olive oil to create your herb mixture.
- Rub this herb mixture all over the pork loin, making sure to get it into all the nooks and crannies.
- Place the pork loin into a roasting pan and pour the vegetable broth into the bottom of the pan.
- Roast the pork in the preheated oven for approximately 50 minutes, or until the internal temperature reads 145F (63C).
