French Roasted Pork with Herbs de Provence

Ingredients:

  • 500 grams Boneless pork loin
  • 2 tablespoons Olive oil
  • 1 tablespoon Herbs de Provence
  • 3 cloves Garlic
  • to taste Salt
  • to taste Black Pepper
  • 1 teaspoon Lemon zest
  • 1 cup Low NA vegetable broth

Instructions:

  1. Preheat your oven to 350F (175C).
  2. In a small bowl, mix together the Herbs de Provence, salt, black pepper, minced garlic, lemon zest, and olive oil to create your herb mixture.
  3. Rub this herb mixture all over the pork loin, making sure to get it into all the nooks and crannies.
  4. Place the pork loin into a roasting pan and pour the vegetable broth into the bottom of the pan.
  5. Roast the pork in the preheated oven for approximately 50 minutes, or until the internal temperature reads 145F (63C).
