
French Riviera Comfort Fish Casserole

Ingredients:
- 4 pieces White fish fillets (like cod or haddock)
- 2 tablespoons Extra virgin olive oil
- 2 medium sized Yellow onion
- 4 cloves Garlic cloves
- 4 medium sized Tomatoes
- 1 cup Fish stock
- 2 teaspoons Herbs de Provence
- To taste Salt
- To taste Black pepper
- 1 medium sized Baguette
Instructions:
- Preheat your oven to 180°C (350°F).
- In a large skillet, sauté the onions in oil over medium heat until they become translucent.
- Add the sliced garlic and cook until fragrant, then add the diced tomatoes and stir through.
- Put fish fillets in a single layer in a casserole dish. Season with salt and pepper then sprinkle the Herbs de Provence over the top.
- Pour the onion and tomato mixture over the fish, then add the fish stock.
- Bake for 30 minutes, or until the fish is cooked through and the edges are bubbly.
- Serve with slices of a fresh, warm baguette to dunk in the delightful sauce.
