French Riviera Comfort Fish Casserole

Ingredients:

  • 4 pieces White fish fillets (like cod or haddock)
  • 2 tablespoons Extra virgin olive oil
  • 2 medium sized Yellow onion
  • 4 cloves Garlic cloves
  • 4 medium sized Tomatoes
  • 1 cup Fish stock
  • 2 teaspoons Herbs de Provence
  • To taste Salt
  • To taste Black pepper
  • 1 medium sized Baguette

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, sauté the onions in oil over medium heat until they become translucent.
  3. Add the sliced garlic and cook until fragrant, then add the diced tomatoes and stir through.
  4. Put fish fillets in a single layer in a casserole dish. Season with salt and pepper then sprinkle the Herbs de Provence over the top.
  5. Pour the onion and tomato mixture over the fish, then add the fish stock.
  6. Bake for 30 minutes, or until the fish is cooked through and the edges are bubbly.
  7. Serve with slices of a fresh, warm baguette to dunk in the delightful sauce.
