
French Riviera Baked Fish

Ingredients:
- 4 fillets Fresh Cod
- 2 tablespoons Lemon Juice
- 1 tablespoon Olive Oil
- 2 sprigs Fresh Thyme
- 3 cloves Garlic
- 1 cup Cherry Tomatoes
- 0.5 cup Green Olives
- to taste Salt
- to taste Black Pepper
Instructions:
- Preheat the oven to 400F (200C).
- Rinse the fish fillets and pat them dry.
- In a small bowl, mix lemon juice, olive oil, minced garlic, salt and pepper.
- Place the fish fillets on a large baking dish. Pour the lemon and oil mixture over them.
- Scatter the thyme sprigs, cherry tomatoes, and green olives over the fish.
- Bake for 15-20 minutes, or until the fish flakes easily with a fork.
- Serve hot, with a side of steamed vegetables or a fresh salad for a complete, healthy meal.
