French Riviera Baked Fish

Ingredients:

  • 4 fillets Fresh Cod
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Olive Oil
  • 2 sprigs Fresh Thyme
  • 3 cloves Garlic
  • 1 cup Cherry Tomatoes
  • 0.5 cup Green Olives
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. Preheat the oven to 400F (200C).
  2. Rinse the fish fillets and pat them dry.
  3. In a small bowl, mix lemon juice, olive oil, minced garlic, salt and pepper.
  4. Place the fish fillets on a large baking dish. Pour the lemon and oil mixture over them.
  5. Scatter the thyme sprigs, cherry tomatoes, and green olives over the fish.
  6. Bake for 15-20 minutes, or until the fish flakes easily with a fork.
  7. Serve hot, with a side of steamed vegetables or a fresh salad for a complete, healthy meal.
