
French Rice Pilaf Snack Cups

Ingredients:
- 2 tablespoons Butter
- 1 small Onion, finely chopped
- 2 cloves Garlic, minced
- 1.5 cups Rice
- 3 cups Chicken broth
- 1 large Carrot, finely diced
- 0.5 cup Frozen peas
- to taste Salt and pepper
- 0.5 cup Parmesan cheese, grated
Instructions:
- 1. Melt the butter in a large saucepan over medium heat. Add the onion and garlic, and sauté until onion is translucent.
- 2. Add the rice to the pan and stir to coat in the butter. Cook for a few minutes until the rice begins to turn golden.
- 3. Slowly add the chicken broth to the pan, stirring constantly to prevent the rice from sticking to the bottom. Bring to a simmer.
- 4. Once the broth is simmering, reduce the heat to low, cover the pan and let it simmer for 15 minutes.
- 5. After 15 minutes, stir in the carrot and peas, and season with salt and pepper. Cover the pan again and let it simmer for an additional 5 minutes.
- 6. Once the rice is tender and all the broth has been absorbed, remove the pan from heat.
- 7. Stir in the Parmesan cheese until it is fully melted and incorporated.
- 8. Spoon the rice into muffin tins or small ramekins, pressing down gently to compact the rice. Let it cool for a few minutes before serving.
