French Rice Pilaf Snack Cups

Ingredients:

  • 2 tablespoons Butter
  • 1 small Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1.5 cups Rice
  • 3 cups Chicken broth
  • 1 large Carrot, finely diced
  • 0.5 cup Frozen peas
  • to taste Salt and pepper
  • 0.5 cup Parmesan cheese, grated

Instructions:

  1. 1. Melt the butter in a large saucepan over medium heat. Add the onion and garlic, and sauté until onion is translucent.
  2. 2. Add the rice to the pan and stir to coat in the butter. Cook for a few minutes until the rice begins to turn golden.
  3. 3. Slowly add the chicken broth to the pan, stirring constantly to prevent the rice from sticking to the bottom. Bring to a simmer.
  4. 4. Once the broth is simmering, reduce the heat to low, cover the pan and let it simmer for 15 minutes.
  5. 5. After 15 minutes, stir in the carrot and peas, and season with salt and pepper. Cover the pan again and let it simmer for an additional 5 minutes.
  6. 6. Once the rice is tender and all the broth has been absorbed, remove the pan from heat.
  7. 7. Stir in the Parmesan cheese until it is fully melted and incorporated.
  8. 8. Spoon the rice into muffin tins or small ramekins, pressing down gently to compact the rice. Let it cool for a few minutes before serving.
