French Rice Cakes

Ingredients:

  • 1 cup Medium Grain Rice
  • 2 cups Water
  • 1 teaspoon Salt
  • 0.5 cup Parmesan cheese
  • 1 teaspoon Rosemary
  • 2 tablespoons Olive oil

Instructions:

  1. 1. Rinse the rice under cold water until the water runs clear.
  2. 2. In a medium saucepan, bring the water to a boil. Add the rice and salt. Reduce the heat to low, cover the pan, and cook for 15-20 minutes, or until the water has been absorbed and the rice is tender.
  3. 3. Remove the pan from the heat and let it stand, covered, for 5 minutes.
  4. 4. After the rice is cooled, mix in the Parmesan cheese and rosemary
  5. 5. Form the mixture into small balls or shaped cakes, pressing firmly to ensure they hold their shape.
  6. 6. In a large skillet, heat the olive oil over medium heat. Add the rice cakes and cook until they are golden brown on all sides. This should take about 3-4 minutes per side.
  7. 7. Serve the rice cakes hot, with a side of tomato sauce or marinara for dipping if desired.
