
French Rice Cakes

Ingredients:
- 1 cup Medium Grain Rice
- 2 cups Water
- 1 teaspoon Salt
- 0.5 cup Parmesan cheese
- 1 teaspoon Rosemary
- 2 tablespoons Olive oil
Instructions:
- 1. Rinse the rice under cold water until the water runs clear.
- 2. In a medium saucepan, bring the water to a boil. Add the rice and salt. Reduce the heat to low, cover the pan, and cook for 15-20 minutes, or until the water has been absorbed and the rice is tender.
- 3. Remove the pan from the heat and let it stand, covered, for 5 minutes.
- 4. After the rice is cooled, mix in the Parmesan cheese and rosemary
- 5. Form the mixture into small balls or shaped cakes, pressing firmly to ensure they hold their shape.
- 6. In a large skillet, heat the olive oil over medium heat. Add the rice cakes and cook until they are golden brown on all sides. This should take about 3-4 minutes per side.
- 7. Serve the rice cakes hot, with a side of tomato sauce or marinara for dipping if desired.
