French Ratatouille for Midnight Cravings

Ingredients:

  • 2 Tablespoons Olive oil
  • 1 Medium sized Onions
  • 2 Pieces Garlic cloves
  • 1 Medium sized Green bell peppers
  • 1 Medium sized Eggplant
  • 2 Medium sized Zucchini
  • 3 Medium sized Tomatoes
  • 1/2 Teaspoon Dried thyme
  • 1/2 Teaspoon Dried rosemary
  • To taste Salt
  • To taste Pepper
  • A handful Fresh basil leaves

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the diced onions and garlic, sauté until they become translucent.
  2. Next, add the diced green pepper, eggplant and zucchini to the pot. Stir and cook for about 10 minutes.
  3. Add the chopped tomatoes, dried thyme and rosemary to the pot. Stir everything together and season with salt and pepper.
  4. Cover the pot and simmer on low heat for about 15-20 minutes, until the vegetables are cooked and soft.
  5. Garnish the ratatouille with fresh basil leaves before serving. Enjoy your comforting French Ratatouille for midnight cravings!
