
French Ratatouille for Midnight Cravings

Ingredients:
- 2 Tablespoons Olive oil
- 1 Medium sized Onions
- 2 Pieces Garlic cloves
- 1 Medium sized Green bell peppers
- 1 Medium sized Eggplant
- 2 Medium sized Zucchini
- 3 Medium sized Tomatoes
- 1/2 Teaspoon Dried thyme
- 1/2 Teaspoon Dried rosemary
- To taste Salt
- To taste Pepper
- A handful Fresh basil leaves
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the diced onions and garlic, sauté until they become translucent.
- Next, add the diced green pepper, eggplant and zucchini to the pot. Stir and cook for about 10 minutes.
- Add the chopped tomatoes, dried thyme and rosemary to the pot. Stir everything together and season with salt and pepper.
- Cover the pot and simmer on low heat for about 15-20 minutes, until the vegetables are cooked and soft.
