French Ratatouille

Ingredients:

  • 60 milliliters extra virgin olive oil
  • 2 units garlic clove
  • 2 units eggplant
  • 3 units bell peppers
  • 2 units zucchini
  • 2 units tomatoes
  • to taste salt
  • to taste pepper
  • 10 units basil leaves
  • 5 units thyme sprigs

Instructions:

  1. Start by heating the oil in a large pot or Dutch oven over medium heat. Add the garlic and cook until fragrant, for about 1 minute.
  2. Cut eggplant, bell peppers, zucchini, and tomatoes into medium-sized chunks and add them to the pot. Stir well to make sure vegetables are coated with olive oil and garlic.
  3. Cook everything over medium heat for about 10 minutes, then reduce the heat to low, cover the pot, and let it simmer for about 50 minutes.
  4. Stir occasionally and add water if necessary. Season with salt and pepper to taste.
  5. Once vegetables are cooked through and the flavors have melded together, garnish with fresh basil leaves and thyme sprigs before serving. Enjoy your delicious French Ratatouille!
