French Ratatouille

Ingredients:
- 60 milliliters extra virgin olive oil
- 2 units garlic clove
- 2 units eggplant
- 3 units bell peppers
- 2 units zucchini
- 2 units tomatoes
- to taste salt
- to taste pepper
- 10 units basil leaves
- 5 units thyme sprigs
Instructions:
- Start by heating the oil in a large pot or Dutch oven over medium heat. Add the garlic and cook until fragrant, for about 1 minute.
- Cut eggplant, bell peppers, zucchini, and tomatoes into medium-sized chunks and add them to the pot. Stir well to make sure vegetables are coated with olive oil and garlic.
- Cook everything over medium heat for about 10 minutes, then reduce the heat to low, cover the pot, and let it simmer for about 50 minutes.
- Stir occasionally and add water if necessary. Season with salt and pepper to taste.
