French Pork Cassoulet - Comfort Food Edition

Ingredients:

  • 2 lbs Pork shoulder
  • 2 cups Dried white beans
  • 14.5 oz Diced tomatoes
  • 4 Garlic cloves
  • 1 Onion
  • 2 Carrot
  • 4 Thyme sprigs
  • 4 cups Chicken broth
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tbsp Olive oil

Instructions:

  1. Soak the dried beans overnight in cold water.
  2. Heat the olive oil in a large pot. Add the pork and cook until browned on all sides.
  3. Remove the pork from the pot and set aside. Add the diced onion, carrot and garlic to the pot and cook until they begin to soften.
  4. Return the pork to the pot. Add the diced tomatoes, thyme, salt, and pepper.
  5. Drain and rinse the beans. Add them to the pot along with the chicken broth. Stir to combine all ingredients.
  6. Bring the pot to a simmer, then cover and let cook for about 2 hours, or until the pork is tender and the beans are cooked through.
  7. Serve the cassoulet warm with crusty French bread.
