French Pork Cassoulet - Comfort Food Edition

Ingredients:
- 2 lbs Pork shoulder
- 2 cups Dried white beans
- 14.5 oz Diced tomatoes
- 4 Garlic cloves
- 1 Onion
- 2 Carrot
- 4 Thyme sprigs
- 4 cups Chicken broth
- 1 tsp Salt
- 1 tsp Pepper
- 2 tbsp Olive oil
Instructions:
- Soak the dried beans overnight in cold water.
- Heat the olive oil in a large pot. Add the pork and cook until browned on all sides.
- Remove the pork from the pot and set aside. Add the diced onion, carrot and garlic to the pot and cook until they begin to soften.
- Return the pork to the pot. Add the diced tomatoes, thyme, salt, and pepper.
- Drain and rinse the beans. Add them to the pot along with the chicken broth. Stir to combine all ingredients.
- Bring the pot to a simmer, then cover and let cook for about 2 hours, or until the pork is tender and the beans are cooked through.
- Serve the cassoulet warm with crusty French bread.
