French Pork Cassoulet

Ingredients:
- 200 grams Streaky bacon
- 500 grams Boneless pork shoulder
- 2 cloves Garlic
- 1 large Onion
- 1 Can of cannellini beans
- 1 Chicken stock cube
- 1 tablespoon Tomato paste
- 2 sprigs Fresh thyme
- to taste Salt
- to taste Pepper
Instructions:
- Preheat your oven to 170C/325F.
- In a large oven-proof casserole dish, cook the bacon on a medium heat until crispy.
- Remove the bacon and set aside, but leave the fat in the pan.
- In the same pan, brown the pork shoulder on each side, then remove and set aside.
- In the same pan, add the chopped onion and minced garlic, cooking until the onions are translucent.
- Add the tomato paste and stir, ensuring the onions are coated.
- Add the cannellini beans, the pork shoulder, the crispy bacon, the chicken stock cube, and enough water to just cover the meat.
- Add the thyme, salt, and pepper.
- Cover the casserole with the lid, then put it in the oven for 2 hours, or until the pork is tender.
- Serve hot and enjoy!
