French Pork Cassoulet

Ingredients:

  • 200 grams Streaky bacon
  • 500 grams Boneless pork shoulder
  • 2 cloves Garlic
  • 1 large Onion
  • 1 Can of cannellini beans
  • 1 Chicken stock cube
  • 1 tablespoon Tomato paste
  • 2 sprigs Fresh thyme
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Preheat your oven to 170C/325F.
  2. In a large oven-proof casserole dish, cook the bacon on a medium heat until crispy.
  3. Remove the bacon and set aside, but leave the fat in the pan.
  4. In the same pan, brown the pork shoulder on each side, then remove and set aside.
  5. In the same pan, add the chopped onion and minced garlic, cooking until the onions are translucent.
  6. Add the tomato paste and stir, ensuring the onions are coated.
  7. Add the cannellini beans, the pork shoulder, the crispy bacon, the chicken stock cube, and enough water to just cover the meat.
  8. Add the thyme, salt, and pepper.
  9. Cover the casserole with the lid, then put it in the oven for 2 hours, or until the pork is tender.
  10. Serve hot and enjoy!
