
French Pasta Salad

Ingredients:
- 2 cups farfalle pasta
- 2 tablespoons Dijon mustard
- 1 tablespoon red wine vinegar
- 1/3 cup olive oil
- 1 cup cherry tomatoes
- 1 whole cucumber
- 1 small red onion
- 1/2 cup feta cheese
- 1/3 cup black olives
- 2 tablespoons flat leaf parsley
- to taste salt and pepper
Instructions:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a large bowl, whisk together the mustard, vinegar, and olive oil. Add in the cooked pasta, cherry tomatoes, sliced cucumber, diced red onion, feta cheese, and chopped olives.
- Toss until well mixed. Season with the chopped parsley, salt, and pepper.
- Serve cold or at room temperature as a light snack or main course.
