French Pasta Salad

Ingredients:

  • 2 cups farfalle pasta
  • 2 tablespoons Dijon mustard
  • 1 tablespoon red wine vinegar
  • 1/3 cup olive oil
  • 1 cup cherry tomatoes
  • 1 whole cucumber
  • 1 small red onion
  • 1/2 cup feta cheese
  • 1/3 cup black olives
  • 2 tablespoons flat leaf parsley
  • to taste salt and pepper

Instructions:

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. In a large bowl, whisk together the mustard, vinegar, and olive oil. Add in the cooked pasta, cherry tomatoes, sliced cucumber, diced red onion, feta cheese, and chopped olives.
  3. Toss until well mixed. Season with the chopped parsley, salt, and pepper.
  4. Serve cold or at room temperature as a light snack or main course.
