
French Fruit Ratatouille

Ingredients:
- 2 whole apple
- 2 whole pear
- 2 whole peach
- 2 whole plum
- 1 whole red onion
- 1 whole red bell pepper
- 3 cloves garlic
- 2 tablespoons olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 tablespoon herbes de Provence
- 2 tablespoons red wine vinegar
Instructions:
- Core and chop the fruits into roughly equal chunks. Chop the red onion and bell pepper, and mince the garlic.
- Heat the olive oil in a large pan over medium heat. Add the onion and bell pepper and sauté for about 5 minutes, until the onion has softened.
- Add the garlic to the pan and cook for another 2 minutes.
- Add the fruit, salt, pepper, and herbes de Provence to the pan and mix well. Cook for about 20 minutes, until the fruit is soft but still retains some shape.
- Add the vinegar to the pan, mix well, and cook for another 2-3 minutes.
- Allow the ratatouille to cool slightly before serving.
