French Fruit Ratatouille

Ingredients:

  • 2 whole apple
  • 2 whole pear
  • 2 whole peach
  • 2 whole plum
  • 1 whole red onion
  • 1 whole red bell pepper
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon herbes de Provence
  • 2 tablespoons red wine vinegar

Instructions:

  1. Core and chop the fruits into roughly equal chunks. Chop the red onion and bell pepper, and mince the garlic.
  2. Heat the olive oil in a large pan over medium heat. Add the onion and bell pepper and sauté for about 5 minutes, until the onion has softened.
  3. Add the garlic to the pan and cook for another 2 minutes.
  4. Add the fruit, salt, pepper, and herbes de Provence to the pan and mix well. Cook for about 20 minutes, until the fruit is soft but still retains some shape.
  5. Add the vinegar to the pan, mix well, and cook for another 2-3 minutes.
  6. Allow the ratatouille to cool slightly before serving.
