
French Fruit Crepes

Ingredients:
- 1 cup milk
- 1 pinch salt
- 2 large eggs
- 1 cup all-purpose flour
- 2 tablespoons unsalted butter
- 2 cups assorted fresh fruits (such as berries, bananas, or peaches)
- 2 tablespoons granulated sugar
Instructions:
- In a large bowl, whisk together the milk, salt, and eggs until well combined.
- Gradually add the flour, whisking constantly until smooth.
- Heat a small non-stick skillet over medium heat, then add a small amount of the butter and melt.
- Pour a small amount of batter into the skillet and swirl to coat the bottom. Cook until the edges begin to peel away from the skillet and the crepe is golden brown on the bottom.
- Flip the crepe and cook the other side until golden brown. Repeat with the remaining batter.
- Fill each crepe with a generous amount of fresh fruit, then fold in half or roll up.
- Sprinkle each crepe with a small amount of the granulated sugar and serve.
