
French Fish Casserole

Ingredients:
- 4 White fish fillets
- 1 Onion
- 2 Garlic cloves
- 1 Red Bell Pepper
- 14 ounces can Diced tomatoes
- 1/2 cup Chicken broth
- 1/4 cup White wine
- 1 teaspoon Thyme
- 1 tablespoon Parsley
- to taste Salt
- to taste Pepper
- 2 tablespoons Olive oil
Instructions:
- 1. Heat the olive oil in a large skillet over medium heat. Add the onion, bell pepper, and garlic and cook until vegetables are soft.
- 2. Add the tomatoes, chicken broth, wine, thyme, and parsley to the skillet. Season with salt and pepper. Bring to a simmer over medium heat.
- 3. Nestle the fish fillets into the broth and cover the skillet. Cook for 10-12 minutes, or until the fish is fully cooked.
- 4. Ladle the vegetables and broth onto plates, top with a fish fillet, spoon some broth over the top, and serve.
