French Fish Casserole

Ingredients:

  • 4 White fish fillets
  • 1 Onion
  • 2 Garlic cloves
  • 1 Red Bell Pepper
  • 14 ounces can Diced tomatoes
  • 1/2 cup Chicken broth
  • 1/4 cup White wine
  • 1 teaspoon Thyme
  • 1 tablespoon Parsley
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive oil

Instructions:

  1. 1. Heat the olive oil in a large skillet over medium heat. Add the onion, bell pepper, and garlic and cook until vegetables are soft.
  2. 2. Add the tomatoes, chicken broth, wine, thyme, and parsley to the skillet. Season with salt and pepper. Bring to a simmer over medium heat.
  3. 3. Nestle the fish fillets into the broth and cover the skillet. Cook for 10-12 minutes, or until the fish is fully cooked.
  4. 4. Ladle the vegetables and broth onto plates, top with a fish fillet, spoon some broth over the top, and serve.
