French Egg Tartines

Ingredients:

  • 4 rustic bread slices
  • 4 eggs
  • 1 garlic clove
  • 2 tablespoons olive oil
  • 1 cup grated gruyere cheese
  • 1 tablespoon chopped parsley
  • to taste salt
  • to taste black pepper

Instructions:

  1. 1. Toast the bread slices to your desired level of crunch.
  2. 2. While the bread is toasting, cook the eggs in a non-stick pan with 1 tablespoon of olive oil. Season with salt and pepper. Scramble the eggs or make an omelette according to your preference.
  3. 3. Rub the warm toasted bread with a garlic clove, then drizzle or brush them with the remaining tablespoon of olive oil.
  4. 4. Place the cooked eggs on top of each slice of bread. Spread the grated gruyere cheese over the eggs while they're still hot.
  5. 5. Sprinkle the chopped parsley on top. Add additional salt and pepper if needed.
  6. 6. Serve immediately and enjoy your delightful French egg tartines!
