French Comfort Rice Pudding

Ingredients:

  • 1 cup Long-grain white rice
  • 3 cups Whole milk
  • 0.5 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 1 piece Cinnamon stick
  • 1 piece Lemon zest

Instructions:

  1. Rinse the rice under cold water until water runs clear.
  2. In a large saucepan, combine the rinsed rice, milk, sugar, vanilla extract, salt, cinnamon stick and lemon zest.
  3. Bring the mixture to a gentle boil, stirring occasionally. Reduce heat to low and simmer for 30-35 minutes, stirring occasionally, until the rice is tender and the milk has reduced to a thick sauce.
  4. Remove the saucepan from the heat and let the rice pudding cool for a few minutes. Remove and discard the cinnamon stick and lemon zest before serving.
  5. Serve warm or chill in the fridge for at least 2 hours for a cold snack. Enjoy your French comfort rice pudding!
