French Comfort Rice Casserole

Ingredients:

  • 2 cups Long grain white rice
  • 4 cups Chicken broth
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 cup Button mushrooms
  • 2 tablespoons Butter
  • 0.5 cup Heavy cream
  • 1 cup Gruyère cheese
  • To taste Salt and pepper

Instructions:

  1. Preheat the oven to 375 degrees.
  2. In a large pot, bring the chicken broth to a boil. Add the rice, lower the heat and simmer until the rice is tender, about 15 minutes.
  3. While the rice is cooking, chop the onion and garlic, and slice the mushrooms.
  4. In a pan, melt the butter and sauté the onion and garlic until fragrant. Add the mushrooms and cook until they release their juice.
  5. Add the rice into the pan and mix well. Season with salt and pepper.
  6. Pour the mixture into a casserole dish. Pour heavy cream on top, and sprinkle with Gruyère cheese.
  7. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden brown. Let rest for 5 minutes before serving.
