
French Comfort Rice Casserole

Ingredients:
- 2 cups Long grain white rice
- 4 cups Chicken broth
- 1 medium Onion
- 2 cloves Garlic
- 1 cup Button mushrooms
- 2 tablespoons Butter
- 0.5 cup Heavy cream
- 1 cup Gruyère cheese
- To taste Salt and pepper
Instructions:
- Preheat the oven to 375 degrees.
- In a large pot, bring the chicken broth to a boil. Add the rice, lower the heat and simmer until the rice is tender, about 15 minutes.
- While the rice is cooking, chop the onion and garlic, and slice the mushrooms.
- In a pan, melt the butter and sauté the onion and garlic until fragrant. Add the mushrooms and cook until they release their juice.
- Add the rice into the pan and mix well. Season with salt and pepper.
- Pour the mixture into a casserole dish. Pour heavy cream on top, and sprinkle with Gruyère cheese.
- Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden brown. Let rest for 5 minutes before serving.
