French Chicken Tartines

Ingredients:

  • 4 pieces Sourdough bread slices
  • 2 cups Chicken breast, grilled and sliced
  • 2 medium Ripe Tomatoes
  • 1 whole Garlic Clove
  • 2 tbsp Dijon Mustard
  • 2 tbsp Olive oil
  • to taste Salt and pepper

Instructions:

  1. Preheat the grill on medium heat.
  2. Rub each slice of sourdough bread with the garlic clove, then brush each slice with olive oil.
  3. Grill the bread slices until they are golden and crispy.
  4. Spread a layer of Dijon mustard over each slice of bread.
  5. Place a layer of grilled chicken slices on each piece of bread.
  6. Slice the tomatoes and layer onto the chicken.
  7. Season with salt and pepper to taste, and drizzle with remaining olive oil.
  8. Return the tartines to the grill for a further 2-3 minutes, or until the chicken is warmed through and the tomatoes are slightly softened.
  9. Remove from the grill and serve immediately.
