French Beef Pot Roast

Ingredients:

  • 1.5 kg Beef roast
  • 4 Carrots
  • 2 Onions
  • 6 Garlic cloves
  • 1 handful Thyme
  • 3 Bay leaves
  • 500 ml Red wine
  • 2 cups Beef stock
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Olive oil

Instructions:

  1. Preheat the oven to 160 degrees C (320 F).
  2. Heat the olive oil in a large ovenproof pot over medium-high heat. Add the beef roast and cook until browned on all sides.
  3. Remove the beef from the pot and set it aside. Add the onions, carrots, and garlic to the pot and cook until they start to soften.
  4. Add the thyme, bay leaves, red wine, and beef stock to the pot. Bring to a simmer and cook for a few minutes to let the alcohol from the wine evaporate.
  5. Return the beef to the pot. Cover the pot and put it in the preheated oven. Cook for about 2 hours, or until the beef is tender and the flavors are well combined.
  6. Remove the pot from the oven and let it cool for a few minutes before serving. Season with salt and pepper to taste.
  7. Serve the beef pot roast with a side of warm crusty bread and enjoy this delicious French comfort food.
