French Beef Pot Roast

Ingredients:
- 1.5 kg Beef roast
- 4 Carrots
- 2 Onions
- 6 Garlic cloves
- 1 handful Thyme
- 3 Bay leaves
- 500 ml Red wine
- 2 cups Beef stock
- to taste Salt
- to taste Pepper
- 2 tbsp Olive oil
Instructions:
- Preheat the oven to 160 degrees C (320 F).
- Heat the olive oil in a large ovenproof pot over medium-high heat. Add the beef roast and cook until browned on all sides.
- Remove the beef from the pot and set it aside. Add the onions, carrots, and garlic to the pot and cook until they start to soften.
- Add the thyme, bay leaves, red wine, and beef stock to the pot. Bring to a simmer and cook for a few minutes to let the alcohol from the wine evaporate.
- Return the beef to the pot. Cover the pot and put it in the preheated oven. Cook for about 2 hours, or until the beef is tender and the flavors are well combined.
- Remove the pot from the oven and let it cool for a few minutes before serving. Season with salt and pepper to taste.
- Serve the beef pot roast with a side of warm crusty bread and enjoy this delicious French comfort food.
