
Flash Fry Sweet and Sour Pineapple Chicken

Ingredients:
- 0.5 kg boneless chicken breast
- 1 piece pineapple
- 1 piece red bell pepper
- 3 tablespoons sweet and sour sauce
- 2 teaspoons cornstarch
- 2 tablespoons olive oil
- to taste salt
- to taste pepper
Instructions:
- Cut the chicken into bite-sized pieces and season with salt and pepper.
- Heat 1 tablespoon of olive oil in a pan over medium-high heat.
- Add the chicken to the pan and cook until lightly browned. Remove from pan and set aside.
- Cut the pineapple and red bell pepper into bite-sized pieces.
- In the same pan, heat another tablespoon of olive oil. Add the pineapple and bell pepper and stir fry for 2-3 minutes.
- Mix the sweet and sour sauce with cornstarch in a separate bowl until there are no lumps.
- Add the sauce to the pan and stir well until it thickens.
- Return the cooked chicken to the pan and stir until all pieces are coated in sauce.
- Serve hot.
