Flash Fry Sweet and Sour Pineapple Chicken

Ingredients:

  • 0.5 kg boneless chicken breast
  • 1 piece pineapple
  • 1 piece red bell pepper
  • 3 tablespoons sweet and sour sauce
  • 2 teaspoons cornstarch
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper

Instructions:

  1. Cut the chicken into bite-sized pieces and season with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a pan over medium-high heat.
  3. Add the chicken to the pan and cook until lightly browned. Remove from pan and set aside.
  4. Cut the pineapple and red bell pepper into bite-sized pieces.
  5. In the same pan, heat another tablespoon of olive oil. Add the pineapple and bell pepper and stir fry for 2-3 minutes.
  6. Mix the sweet and sour sauce with cornstarch in a separate bowl until there are no lumps.
  7. Add the sauce to the pan and stir well until it thickens.
  8. Return the cooked chicken to the pan and stir until all pieces are coated in sauce.
  9. Serve hot.
