
Fish Curry with Rice

Ingredients:
- 500 grams Fish
- 2 cups Basmati Rice
- 1 large Onion
- 2 medium Tomato
- 5 cloves Garlic
- 1 inch piece Ginger
- 1 teaspoon Cumin seeds
- 2 teaspoons Coriander powder
- 1 teaspoon Turmeric powder
- 1 teaspoon Red chili powder
- to taste Salt
- for frying Oil
- for garnish Coriander leaves
Instructions:
- Start by washing the fish and marinating it with a bit of turmeric and salt. Set aside for 15 minutes.
- In the meantime, dice the onion, chop the tomatoes, and make a paste of the ginger and garlic.
- Heat oil in a pan, add the cumin seeds. When they start to splutter, add the diced onion to the pan.
- Once the onion turns golden brown, add the ginger-garlic paste. Cook until the raw smell goes away.
- Then, add the chopped tomatoes along with the coriander, turmeric, and red chili powder. Cook until the tomatoes are soft and mushy.
- Add the marinated fish to the pan. Cook on low heat until the fish is cooked through and the spices have permeated it.
- In another pot, cook the Basmati rice until it's nice and fluffy.
- Finally, garnish the fish curry with fresh coriander leaves and serve it hot with the Basmati rice.
