Exotic Vegetable Tempura

Ingredients:

  • 1 Head Purple Cauliflower
  • 1 Head Romanesco Broccoli
  • 2 Yellow Beetroot
  • 2 Salsify root
  • 1 bunch Wasabi Green
  • 2 cups All purpose flour
  • 1.5 cups Cold sparkling water
  • for deep frying Vegetable oil
  • to taste Salt
  • to taste Black pepper
  • for serving Tempura dipping sauce

Instructions:

  1. Clean all the vegetables and cut into bite-sized pieces.
  2. Heat the vegetable oil in a large and deep pan over a medium heat.
  3. In a bowl, mix the flour with cold sparkling water until you get a light but slightly thick batter.
  4. Dip the vegetables in the batter one by one, ensuring they're fully coated.
  5. Carefully place the battered vegetables in the hot oil. Deep fry until the batter becomes crispy and light golden in color.
  6. Drain the fried tempura on a kitchen towel to remove excess oil.
  7. Season with salt and pepper to taste.
  8. Serve the vegetable tempura hot with a dipping sauce.
