
Exotic Vegetable Tempura

Ingredients:
- 1 Head Purple Cauliflower
- 1 Head Romanesco Broccoli
- 2 Yellow Beetroot
- 2 Salsify root
- 1 bunch Wasabi Green
- 2 cups All purpose flour
- 1.5 cups Cold sparkling water
- for deep frying Vegetable oil
- to taste Salt
- to taste Black pepper
- for serving Tempura dipping sauce
Instructions:
- Clean all the vegetables and cut into bite-sized pieces.
- Heat the vegetable oil in a large and deep pan over a medium heat.
- In a bowl, mix the flour with cold sparkling water until you get a light but slightly thick batter.
- Dip the vegetables in the batter one by one, ensuring they're fully coated.
- Carefully place the battered vegetables in the hot oil. Deep fry until the batter becomes crispy and light golden in color.
- Drain the fried tempura on a kitchen towel to remove excess oil.
- Season with salt and pepper to taste.
- Serve the vegetable tempura hot with a dipping sauce.
