Exotic Vegetable Ratatouille

Ingredients:

  • 1 whole Eggplant
  • 2 whole Zucchini
  • 2 whole Bell peppers, mixed colors
  • 1 whole Onion
  • 3 whole Tomatoes
  • 2 whole Garlic cloves
  • 1/4 cup Extra virgin olive oil
  • 2 teaspoons Herbes de Provence
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C)
  2. Cut all vegetables into bite-size pieces. Mince the garlic.
  3. In a large oven-safe pan over medium heat, sauté onions and garlic in olive oil until onions are translucent.
  4. Add eggplant, bell peppers, zucchini to the pan. Sauté for about 5 minutes, then add tomatoes.
  5. Add Herbes de Provence, salt, and pepper. Stir well to combine.
  6. Cover pan with foil or oven-safe lid and bake in the preheated oven for approximately 45 minutes, until vegetables are tender.
  7. Remove from oven and let it cool for a few minutes before serving.
