Exotic Vegetable Ratatouille

Ingredients:
- 1 whole Eggplant
- 2 whole Zucchini
- 2 whole Bell peppers, mixed colors
- 1 whole Onion
- 3 whole Tomatoes
- 2 whole Garlic cloves
- 1/4 cup Extra virgin olive oil
- 2 teaspoons Herbes de Provence
- to taste Salt
- to taste Pepper
Instructions:
- Preheat oven to 375 degrees F (190 degrees C)
- Cut all vegetables into bite-size pieces. Mince the garlic.
- In a large oven-safe pan over medium heat, sauté onions and garlic in olive oil until onions are translucent.
- Add eggplant, bell peppers, zucchini to the pan. Sauté for about 5 minutes, then add tomatoes.
- Add Herbes de Provence, salt, and pepper. Stir well to combine.
- Cover pan with foil or oven-safe lid and bake in the preheated oven for approximately 45 minutes, until vegetables are tender.
- Remove from oven and let it cool for a few minutes before serving.
