Exotic Vegetable Quiche

Ingredients:

  • 1 piece Pie Crust
  • 1 piece Zucchini
  • 1 piece Red Bell Pepper
  • 1 cup Spinach
  • 0.5 piece Purple Sweet Potato
  • 50 grams Goat Cheese
  • 4 piece Eggs
  • 0.5 cup Heavy Cream
  • To Taste Salt and Pepper

Instructions:

  1. Preheat oven to 180 degrees Celsius.
  2. Roll out pie crust and place it in a greased pie dish.
  3. Dice the zucchini, red bell pepper, and purple sweet potato. Sauté them in a pan with a bit of oil until they're soft and slightly browned.
  4. Add the chopped spinach to the pan and stir until it has wilted.
  5. In a bowl, whisk together the eggs, heavy cream, and a pinch of salt and pepper.
  6. Spread the sautéed vegetables on the pie crust, followed by the crumbled goat cheese.
  7. Pour the egg mixture over the vegetables.
  8. Bake for 40-50 minutes, or until the quiche has set and the top is golden brown.
  9. Let the quiche cool for a few minutes before slicing and serving.
