Exotic Vegetable Quiche

Ingredients:
- 1 piece Pie Crust
- 1 piece Zucchini
- 1 piece Red Bell Pepper
- 1 cup Spinach
- 0.5 piece Purple Sweet Potato
- 50 grams Goat Cheese
- 4 piece Eggs
- 0.5 cup Heavy Cream
- To Taste Salt and Pepper
Instructions:
- Preheat oven to 180 degrees Celsius.
- Roll out pie crust and place it in a greased pie dish.
- Dice the zucchini, red bell pepper, and purple sweet potato. Sauté them in a pan with a bit of oil until they're soft and slightly browned.
- Add the chopped spinach to the pan and stir until it has wilted.
- In a bowl, whisk together the eggs, heavy cream, and a pinch of salt and pepper.
- Spread the sautéed vegetables on the pie crust, followed by the crumbled goat cheese.
- Pour the egg mixture over the vegetables.
- Bake for 40-50 minutes, or until the quiche has set and the top is golden brown.
- Let the quiche cool for a few minutes before slicing and serving.
