
Exotic Vegetable Medley

Ingredients:
- 2 whole Sweet potatoes
- 4 whole Purple carrots
- 2 whole Parsnips
- 2 tablespoons Olive oil
- 1 tablespoon Exotic spice blend
- to taste Salt and pepper
Instructions:
- Preheat oven to 425°F (220°C).
- Peel and cut sweet potatoes, purple carrots and parsnips into bite-sized pieces.
- Place cut vegetables in a bowl. Drizzle with olive oil and toss till all pieces are coated.
- Sprinkle the exotic spice blend, salt and pepper over the vegetables. Toss again to ensure even coating.
- Spread vegetables out in a single layer on a baking sheet lined with parchment paper.
- Bake for 15 minutes, or until vegetables are tender and lightly caramelized. Stir once or twice during baking to ensure even cooking.
- Remove from oven and let cool for a few minutes before serving.
