Exotic Vegetable Medley

Ingredients:

  • 2 whole Sweet potatoes
  • 4 whole Purple carrots
  • 2 whole Parsnips
  • 2 tablespoons Olive oil
  • 1 tablespoon Exotic spice blend
  • to taste Salt and pepper

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Peel and cut sweet potatoes, purple carrots and parsnips into bite-sized pieces.
  3. Place cut vegetables in a bowl. Drizzle with olive oil and toss till all pieces are coated.
  4. Sprinkle the exotic spice blend, salt and pepper over the vegetables. Toss again to ensure even coating.
  5. Spread vegetables out in a single layer on a baking sheet lined with parchment paper.
  6. Bake for 15 minutes, or until vegetables are tender and lightly caramelized. Stir once or twice during baking to ensure even cooking.
  7. Remove from oven and let cool for a few minutes before serving.
