Exotic Tuscan Pork Tenderloin

Ingredients:

  • 1.5 lbs Pork tenderloin
  • 2 tbsp Fresh rosemary
  • 1 tbsp chopped Fresh thyme
  • 4 cloves Garlic
  • 1 tsp Fennel seeds
  • 2 tbsp Extra-virgin olive oil
  • to taste Salt
  • to taste Black pepper
  • 0.5 cup White wine
  • 0.5 cup Chicken broth

Instructions:

  1. Combine rosemary, thyme, garlic, fennel seeds, olive oil, salt, and black pepper in a mortar and pestle. Grind until medium paste is formed.
  2. Coat the pork tenderloin with the spice paste evenly. Allow it to marinate for at least 15 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. Heat a pan over medium heat. When hot, add the tenderloin and sear each side until golden brown, about 2 minutes per side.
  5. Transfer the tenderloin to a roasting pan and place in the preheated oven. Roast for about 20-25 minutes or until the internal temperature reaches 145°F (63°C).
  6. While the pork is roasting, de-glaze the pan with white wine and chicken broth. Let it reduce to half.
  7. When the pork is done, let it rest for a few minutes before slicing. Serve the pork slices on a bed of the reduced sauce.
