Exotic Tuscan Pork Tenderloin

Ingredients:
- 1.5 lbs Pork tenderloin
- 2 tbsp Fresh rosemary
- 1 tbsp chopped Fresh thyme
- 4 cloves Garlic
- 1 tsp Fennel seeds
- 2 tbsp Extra-virgin olive oil
- to taste Salt
- to taste Black pepper
- 0.5 cup White wine
- 0.5 cup Chicken broth
Instructions:
- Combine rosemary, thyme, garlic, fennel seeds, olive oil, salt, and black pepper in a mortar and pestle. Grind until medium paste is formed.
- Coat the pork tenderloin with the spice paste evenly. Allow it to marinate for at least 15 minutes.
- Preheat your oven to 375°F (190°C).
- Heat a pan over medium heat. When hot, add the tenderloin and sear each side until golden brown, about 2 minutes per side.
- Transfer the tenderloin to a roasting pan and place in the preheated oven. Roast for about 20-25 minutes or until the internal temperature reaches 145°F (63°C).
- While the pork is roasting, de-glaze the pan with white wine and chicken broth. Let it reduce to half.
- When the pork is done, let it rest for a few minutes before slicing. Serve the pork slices on a bed of the reduced sauce.
