
Exotic Thai Vegetable Stir Fry

Ingredients:
- 2 tablespoons Olive oil
- 4 cups Mixed Vegetables (broccoli, bell peppers, carrots)
- 2 pieces Garlic cloves
- 1 inch piece Ginger
- 2 tablespoons Red Thai Curry Paste
- 1.5 cups Coconut Milk
- 2 tablespoons Soy sauce
- 1 tablespoon Brown Sugar
- 1 cup Tofu (optional)
- Handful Fresh Basil Leaves
- Salt to taste
- Black Pepper to taste
Instructions:
- Wash and chop all the vegetables. Peel and finely chop the garlic and ginger.
- Heat oil in a pan over medium heat. Add the chopped garlic and ginger. Stir-fry for a minute.
- Add mixed vegetables to the pan. Stir-fry for about 5 minutes.
- Add the red Thai curry paste and stir well so that all vegetables are coated.
- Pour in the coconut milk, soy sauce, and sugar. Stir well and let it simmer for 10 minutes.
- If using tofu, add it to the pan and stir gently. Allow it to simmer for an additional 5 minutes.
- Season with salt and pepper to your liking. Stir in the fresh basil leaves.
- Serve your Exotic Thai Vegetable Stir Fry hot with a side of jasmine rice or noodles. Enjoy your exotic Thai breakfast!
