Exotic Thai Vegetable Stir Fry

Ingredients:

  • 2 tablespoons Olive oil
  • 4 cups Mixed Vegetables (broccoli, bell peppers, carrots)
  • 2 pieces Garlic cloves
  • 1 inch piece Ginger
  • 2 tablespoons Red Thai Curry Paste
  • 1.5 cups Coconut Milk
  • 2 tablespoons Soy sauce
  • 1 tablespoon Brown Sugar
  • 1 cup Tofu (optional)
  • Handful Fresh Basil Leaves
  • Salt to taste
  • Black Pepper to taste

Instructions:

  1. Wash and chop all the vegetables. Peel and finely chop the garlic and ginger.
  2. Heat oil in a pan over medium heat. Add the chopped garlic and ginger. Stir-fry for a minute.
  3. Add mixed vegetables to the pan. Stir-fry for about 5 minutes.
  4. Add the red Thai curry paste and stir well so that all vegetables are coated.
  5. Pour in the coconut milk, soy sauce, and sugar. Stir well and let it simmer for 10 minutes.
  6. If using tofu, add it to the pan and stir gently. Allow it to simmer for an additional 5 minutes.
  7. Season with salt and pepper to your liking. Stir in the fresh basil leaves.
  8. Serve your Exotic Thai Vegetable Stir Fry hot with a side of jasmine rice or noodles. Enjoy your exotic Thai breakfast!
