
Exotic Thai Sweet Chili Garlic Chicken

Ingredients:
- 2 pieces Chicken breasts
- 4 pieces Garlic cloves
- 1/3 cup Thai sweet chili sauce
- 2 tablespoons Soy sauce
- 1 tablespoon Fresh lime juice
- 1 tablespoon Honey
- 1/2 teaspoon Freshly crushed black pepper
- 1/4 cup Fresh cilantro leaves
- 2 tablespoons Cooking oil
- 1 piece Red bell pepper
- 1/2 cup Baby corn
Instructions:
- Cut chicken breasts into bite-sized pieces and set aside.
- In a bowl, mix together Thai sweet chili sauce, soy sauce, lime juice, honey, and crushed black pepper to create the marinade.
- Peel and finely chop the garlic cloves. Slice the red bell pepper into thin strips.
- Heat oil in a pan over medium heat. Add garlic and sauté until fragrant.
- Add the chicken to the pan and cook until it start to turn white.
- Pour the sauce mixture into the pan and stir well to coat the chicken. Cover and let it simmer for 10 minutes.
- Add the sliced bell pepper and baby corn to the pan. Stir well and continue to simmer for another 5 minutes or until chicken is fully cooked and the vegetables are tender.
- Remove from heat and garnish with fresh cilantro leaves before serving. Best enjoyed with a side of jasmine rice or noodles.
