Exotic Thai Sweet Chili Garlic Chicken

Ingredients:

  • 2 pieces Chicken breasts
  • 4 pieces Garlic cloves
  • 1/3 cup Thai sweet chili sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Fresh lime juice
  • 1 tablespoon Honey
  • 1/2 teaspoon Freshly crushed black pepper
  • 1/4 cup Fresh cilantro leaves
  • 2 tablespoons Cooking oil
  • 1 piece Red bell pepper
  • 1/2 cup Baby corn

Instructions:

  1. Cut chicken breasts into bite-sized pieces and set aside.
  2. In a bowl, mix together Thai sweet chili sauce, soy sauce, lime juice, honey, and crushed black pepper to create the marinade.
  3. Peel and finely chop the garlic cloves. Slice the red bell pepper into thin strips.
  4. Heat oil in a pan over medium heat. Add garlic and sauté until fragrant.
  5. Add the chicken to the pan and cook until it start to turn white.
  6. Pour the sauce mixture into the pan and stir well to coat the chicken. Cover and let it simmer for 10 minutes.
  7. Add the sliced bell pepper and baby corn to the pan. Stir well and continue to simmer for another 5 minutes or until chicken is fully cooked and the vegetables are tender.
  8. Remove from heat and garnish with fresh cilantro leaves before serving. Best enjoyed with a side of jasmine rice or noodles.
