
Exotic Thai-style Breakfast Pork Stir-Fry

Ingredients:
- 500 grams Marinated pork belly slices
- 2 cups Cooked jasmine rice
- 3 cloves Garlic
- 1 bunch Thai Basil
- 4 peppers Bird's eye chilis
- 2 tablespoons Fish sauce
- 2 tablespoons Oyster sauce
- 1 teaspoon Sugar
- 2 tablespoons Vegetable oil
- 2 whole Eggs
Instructions:
- Start by preparing the ingredients. Mince the garlic, cut the chilis into thin rings, chop the Thai basil, slice the marinated pork belly into thin pieces.
- Heat oil in a wok or large frying pan over medium-high heat. Add the pork slices and stir-fry until they begin to brown.
- Add the minced garlic and chili rings to the pan. Stir-fry for another 2 minutes until the garlic starts to golden and the chilis have released their aroma.
- Add the cooked jasmine rice to the pan. Stir thoroughly to combine and allow the rice to heat up.
- Push the pork and rice mixture to the side of the pan, making space for the eggs. Crack the eggs into the pan and scramble them until they are just set.
- Add the Thai basil, fish sauce, oyster sauce, and sugar to the pan. Stir everything together so that all the ingredients are evenly distributed and coated in the sauces.
- Continue to stir-fry the mixture for another 2 minutes or until the pork is fully cooked and the basil leaves have wilted.
- Remove from heat and serve the stir-fry hot with extra Thai basil and a sprinkling of fresh lime juice.
