Exotic Thai Seafood Salad

Ingredients:

  • 16 whole Large prawns
  • 10 whole Green mussels
  • 2 stems whole Lemon grass, finely chopped
  • 4 whole Lime leaves, finely chopped
  • 2 whole Red chili, thinly sliced
  • 3 tablespoons Fish sauce
  • 5 tablespoons Lime juice
  • 2 teaspoons Sugar
  • 1 handful whole Fresh mint leaves
  • 1 handful whole Fresh coriander leaves
  • 1 handful whole Fresh basil leaves

Instructions:

  1. Boil the prawns and mussels until cooked, then peel the prawns and remove the mussel meat from shells. Let it cool.
  2. Prepare the dressing by mixing together fish sauce, lime juice, sugar, chopped lemon grass, lime leaves and sliced red chili.
  3. In a large bowl, combine the seafood and dressing. Toss to mix well.
  4. Before serving, mix in fresh mint, coriander, and basil leaves.
