
Exotic Thai Seafood Salad

Ingredients:
- 16 whole Large prawns
- 10 whole Green mussels
- 2 stems whole Lemon grass, finely chopped
- 4 whole Lime leaves, finely chopped
- 2 whole Red chili, thinly sliced
- 3 tablespoons Fish sauce
- 5 tablespoons Lime juice
- 2 teaspoons Sugar
- 1 handful whole Fresh mint leaves
- 1 handful whole Fresh coriander leaves
- 1 handful whole Fresh basil leaves
Instructions:
- Boil the prawns and mussels until cooked, then peel the prawns and remove the mussel meat from shells. Let it cool.
- Prepare the dressing by mixing together fish sauce, lime juice, sugar, chopped lemon grass, lime leaves and sliced red chili.
- In a large bowl, combine the seafood and dressing. Toss to mix well.
- Before serving, mix in fresh mint, coriander, and basil leaves.
