
Exotic Thai Seafood Curry

Ingredients:
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 tbsp Fish sauce
- 1 tbsp Brown sugar
- 1 tbsp Lime juice
- 500 grams Mixed seafood
- 200 grams Bamboo shoots
- handful Thai basil leaves
- 1 Lime
- 4 servings Steamed jasmine rice
Instructions:
- 1. Heat the coconut milk in a large pan over medium heat, then stir in the red curry paste until well combined.
- 2. Add the fish sauce, brown sugar, and lime juice into the pan, and stir until the sugar is dissolved.
- 3. Add the mixed seafood and bamboo shoots to the pan. Simmer for about 15 to 20 minutes, or until the seafood is cooked through and the flavors are combined.
- 4. Just before serving, stir in the fresh Thai basil leaves.
- 5. Serve the curry hot, with a wedge of lime and steamed jasmine rice.
