Exotic Thai Seafood Curry

Ingredients:

  • 400 ml Coconut milk
  • 2 tbsp Red curry paste
  • 1 tbsp Fish sauce
  • 1 tbsp Brown sugar
  • 1 tbsp Lime juice
  • 500 grams Mixed seafood
  • 200 grams Bamboo shoots
  • handful Thai basil leaves
  • 1 Lime
  • 4 servings Steamed jasmine rice

Instructions:

  1. 1. Heat the coconut milk in a large pan over medium heat, then stir in the red curry paste until well combined.
  2. 2. Add the fish sauce, brown sugar, and lime juice into the pan, and stir until the sugar is dissolved.
  3. 3. Add the mixed seafood and bamboo shoots to the pan. Simmer for about 15 to 20 minutes, or until the seafood is cooked through and the flavors are combined.
  4. 4. Just before serving, stir in the fresh Thai basil leaves.
  5. 5. Serve the curry hot, with a wedge of lime and steamed jasmine rice.
