Exotic Thai Red Curry Pork

Ingredients:
- 1 pound Pork Loin
- 3 tablespoons Red Curry Paste
- 1 can Coconut Milk
- 2 tablespoons Fish Sauce
- 1 tablespoon Brown Sugar
- 4 Lime leaves
- 2 Thai Eggplant
- 1 cup Bamboo Shoots
- 1 handful Thai Basil Leaves
- 4 servings Cooked Jasmine Rice
Instructions:
- Cut the pork into thin slices. Bake in preheated 375 degree Fahrenheit oven for 5 to 10 minutes, until slightly brown on the outside. Remove and set aside.
- In a large pot or wok, heat up the red curry paste. Gradually add coconut milk, stirring continuously.
- Add the fish sauce, brown sugar, and lime leaves. Bring to a simmer.
- Add the pork, eggplants, and bamboo shoots into the pot. Cook for about 20 minutes, until the vegetables are tender.
- Sprinkle in the Thai basil leaves and remove from heat.
- Serve the curry over Jasmine rice, garnishing with additional basil leaves if desired.
