Exotic Thai Red Curry Pork

Ingredients:

  • 1 pound Pork Loin
  • 3 tablespoons Red Curry Paste
  • 1 can Coconut Milk
  • 2 tablespoons Fish Sauce
  • 1 tablespoon Brown Sugar
  • 4 Lime leaves
  • 2 Thai Eggplant
  • 1 cup Bamboo Shoots
  • 1 handful Thai Basil Leaves
  • 4 servings Cooked Jasmine Rice

Instructions:

  1. Cut the pork into thin slices. Bake in preheated 375 degree Fahrenheit oven for 5 to 10 minutes, until slightly brown on the outside. Remove and set aside.
  2. In a large pot or wok, heat up the red curry paste. Gradually add coconut milk, stirring continuously.
  3. Add the fish sauce, brown sugar, and lime leaves. Bring to a simmer.
  4. Add the pork, eggplants, and bamboo shoots into the pot. Cook for about 20 minutes, until the vegetables are tender.
  5. Sprinkle in the Thai basil leaves and remove from heat.
  6. Serve the curry over Jasmine rice, garnishing with additional basil leaves if desired.
