
Exotic Thai Lemongrass Chicken

Ingredients:
- 4 pcs Boneless chicken breasts
- 2 stalks Lemongrass
- 2 cloves Garlic
- 2 tablespoons Fish sauce
- 1 tablespoon Light brown sugar
- 400 ml Coconut milk
- 2 tablespoons Fresh lime juice
- 1 teaspoon Freshly ground black pepper
- 1 teaspoon Sea salt
- 2 pcs Thai red chilies
- 1 handful Fresh basil leaves
- 2 tablespoons Peanut oil
Instructions:
- In a food processor, blend the lemongrass, garlic, fish sauce, sugar, lime juice, black pepper, sea salt and red chilies into a smooth paste.
- Place the chicken in a bowl and pour this mix over it. Let it marinate for at least 1 hour or overnight if possible.
- Preheat a frying pan with the peanut oil on medium heat. Remove the chicken from the marinade (keep this aside for later) and cook each side for approximately 5-7 minutes until golden brown and cooked through.
- Once the chicken is fully cooked, remove it from the pan and let it rest for a few minutes. Meanwhile, pour the remaining marinade into the pan and bring it to a simmer. Add the coconut milk and continue to simmer until the sauce has thickened.
- Serve the chicken on a bed of jasmine rice, pour the sauce over it, and garnish with fresh basil leaves.
