
Exotic Thai Fruit Salad

Ingredients:
- 4 cups cubed Mixed tropical fruits (mango, pineapple, dragon fruit, rambutan)
- 1/2 cup Fresh mint leaves
- 1/2 cup Fresh cilantro leaves
- 1 minced Red chili
- 1/4 cup Lime juice
- 2 tablespoons Fish sauce
- 1 tablespoon Brown sugar
- 1/4 cup crushed Roasted peanuts
Instructions:
- 1. Cut the tropical fruits into small cubes. Toss them in a large salad bowl.
- 2. finely chop the fresh mint and cilantro leaves, and add them to the salad bowl.
- 3. Add the minced red chili to the salad bowl.
- 4. In a small bowl, mix together the lime juice, fish sauce, and brown sugar until the sugar is completely dissolved.
- 5. Pour the dressing over the salad and toss gently to combine.
- 6. Top the salad with the crushed peanuts before serving.
