
Exotic Thai Egg Stir-fry

Ingredients:
- 8 whole Eggs
- 3 cloves Garlic
- 2 whole Red chilli peppers
- 4 whole Green onions
- 2 tablespoons Fish sauce
- 1 tablespoons Soy sauce
- 2 tablespoons Vegetable oil
- 1 teaspoon Sugar
- 1 handful Basil leaves
Instructions:
- Crack the eggs into a bowl and whisk until the yolks and whites are fully combined.
- Chop the garlic, chilli peppers, and green onions. Keep them separate.
- Heat the vegetable oil in a pan over medium heat. Add the garlic and fry until golden.
- Add the chilli peppers and fry for a further minute.
- Add the eggs to the pan and stir constantly until they begin to set.
- Add the fish sauce, soy sauce, and sugar to the pan. Stir to combine with the eggs.
- Add the green onions and stir to combine.
- Continue to cook the mixture until the eggs are fully set.
- Just before serving, stir in the basil leaves.
- Serve immediately with steamed rice or enjoy as is.
