Exotic Thai Egg Stir-fry

Ingredients:

  • 8 whole Eggs
  • 3 cloves Garlic
  • 2 whole Red chilli peppers
  • 4 whole Green onions
  • 2 tablespoons Fish sauce
  • 1 tablespoons Soy sauce
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Sugar
  • 1 handful Basil leaves

Instructions:

  1. Crack the eggs into a bowl and whisk until the yolks and whites are fully combined.
  2. Chop the garlic, chilli peppers, and green onions. Keep them separate.
  3. Heat the vegetable oil in a pan over medium heat. Add the garlic and fry until golden.
  4. Add the chilli peppers and fry for a further minute.
  5. Add the eggs to the pan and stir constantly until they begin to set.
  6. Add the fish sauce, soy sauce, and sugar to the pan. Stir to combine with the eggs.
  7. Add the green onions and stir to combine.
  8. Continue to cook the mixture until the eggs are fully set.
  9. Just before serving, stir in the basil leaves.
  10. Serve immediately with steamed rice or enjoy as is.
