Exotic Thai Chicken Satay

Ingredients:

  • 2 piece Boneless Chicken Breasts
  • 1 cup Coconut Milk
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Curry Powder
  • 2 tablespoons Brown Sugar
  • 1/2 teaspoon Ground Turmeric
  • 1/2 teaspoon Salt
  • 1/2 cup Peanut Butter
  • 1/4 cup Hot Water
  • 2 tablespoons Chopped fresh cilantro
  • 2 tablespoons Chopped unsalted peanuts

Instructions:

  1. Cut the chicken into thin slices, about 1/2 inch wide.
  2. In a bowl, combine the coconut milk, soy sauce, curry powder, brown sugar, turmeric, and salt. Add the chicken, toss to coat, and refrigerate for at least 20 minutes, up to 2 hours.
  3. While the chicken is marinating, make the peanut sauce: In a small bowl, mix the peanut butter and hot water until smooth. Stir in the cilantro and peanuts.
  4. Preheat a grill or broiler on high.
  5. Thread the marinated chicken onto skewers, then grill or broil, turning occasionally, until cooked through, about 15 minutes.
  6. Serve the chicken skewers with the peanut sauce.
