
Exotic Thai Chicken Satay

Ingredients:
- 2 piece Boneless Chicken Breasts
- 1 cup Coconut Milk
- 2 tablespoons Soy Sauce
- 1 tablespoon Curry Powder
- 2 tablespoons Brown Sugar
- 1/2 teaspoon Ground Turmeric
- 1/2 teaspoon Salt
- 1/2 cup Peanut Butter
- 1/4 cup Hot Water
- 2 tablespoons Chopped fresh cilantro
- 2 tablespoons Chopped unsalted peanuts
Instructions:
- Cut the chicken into thin slices, about 1/2 inch wide.
- In a bowl, combine the coconut milk, soy sauce, curry powder, brown sugar, turmeric, and salt. Add the chicken, toss to coat, and refrigerate for at least 20 minutes, up to 2 hours.
- While the chicken is marinating, make the peanut sauce: In a small bowl, mix the peanut butter and hot water until smooth. Stir in the cilantro and peanuts.
- Preheat a grill or broiler on high.
- Thread the marinated chicken onto skewers, then grill or broil, turning occasionally, until cooked through, about 15 minutes.
- Serve the chicken skewers with the peanut sauce.
