
Exotic Thai Breakfast Fish Curry

Ingredients:
- 4 Fish fillets
- 400 ml Coconut milk
- 3 tablespoons Red Thai curry paste
- 2 tablespoons Fish sauce
- 2 tablespoons Lime juice
- 1 tablespoon Brown sugar
- 1 thumb-sized piece, grated Galangal or ginger
- 4 Kaffir lime leaves
- 1 handful Thai basil leaves
- 2 tablespoons Vegetable oil
- Enough for 4 servings Steamed Jasmine rice
Instructions:
- Heat the vegetable oil in a wok or large frying pan.
- Add the curry paste and grate in the galangal.
- Cook for a couple of minutes until fragrant.
- Pour in the coconut milk and bring to a simmer.
- Add the fish fillets and kaffir lime leaves.
- Simmer for 10-15 minutes, until the fish is cooked through.
- Stir in the fish sauce, lime juice, brown sugar, and half the Thai basil leaves.
- Simmer for another 2-3 minutes.
- Serve hot over steamed jasmine rice, garnished with the remaining Thai basil leaves.
