Exotic Thai Breakfast Fish Curry

Ingredients:

  • 4 Fish fillets
  • 400 ml Coconut milk
  • 3 tablespoons Red Thai curry paste
  • 2 tablespoons Fish sauce
  • 2 tablespoons Lime juice
  • 1 tablespoon Brown sugar
  • 1 thumb-sized piece, grated Galangal or ginger
  • 4 Kaffir lime leaves
  • 1 handful Thai basil leaves
  • 2 tablespoons Vegetable oil
  • Enough for 4 servings Steamed Jasmine rice

Instructions:

  1. Heat the vegetable oil in a wok or large frying pan.
  2. Add the curry paste and grate in the galangal.
  3. Cook for a couple of minutes until fragrant.
  4. Pour in the coconut milk and bring to a simmer.
  5. Add the fish fillets and kaffir lime leaves.
  6. Simmer for 10-15 minutes, until the fish is cooked through.
  7. Stir in the fish sauce, lime juice, brown sugar, and half the Thai basil leaves.
  8. Simmer for another 2-3 minutes.
  9. Serve hot over steamed jasmine rice, garnished with the remaining Thai basil leaves.
