Exotic Szechuan Vegetable Stir Fry

Ingredients:

  • 2 tablespoons Vegetable oil
  • 3 cloves Garlic
  • 1 inch piece Ginger
  • 4 cups Mixed vegetables (bell peppers, broccoli, baby corn, snap peas)
  • 1 teaspoon Szechuan pepper
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Brown sugar
  • 2 teaspoons Cornstarch
  • 2 tablespoons Water

Instructions:

  1. Heat the oil in a wok or large frying pan over medium-high heat.
  2. Add the minced garlic and grated ginger, fry for 30 seconds until fragrant.
  3. Add the mixed vegetables and Szechuan pepper. Stir fry for 5-7 minutes, until the vegetables are tender-crisp.
  4. In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, cornstarch and water. Pour this mixture over the vegetables in the wok.
  5. Stir well to coat the vegetables in the sauce. Cook for another 2-3 minutes until the sauce has thickened.
  6. Serve the stir fry over steamed rice for a complete meal.
