
Exotic Szechuan Vegetable Stir Fry

Ingredients:
- 2 tablespoons Vegetable oil
- 3 cloves Garlic
- 1 inch piece Ginger
- 4 cups Mixed vegetables (bell peppers, broccoli, baby corn, snap peas)
- 1 teaspoon Szechuan pepper
- 2 tablespoons Soy sauce
- 1 tablespoon Rice vinegar
- 1 tablespoon Brown sugar
- 2 teaspoons Cornstarch
- 2 tablespoons Water
Instructions:
- Heat the oil in a wok or large frying pan over medium-high heat.
- Add the minced garlic and grated ginger, fry for 30 seconds until fragrant.
- Add the mixed vegetables and Szechuan pepper. Stir fry for 5-7 minutes, until the vegetables are tender-crisp.
- In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, cornstarch and water. Pour this mixture over the vegetables in the wok.
- Stir well to coat the vegetables in the sauce. Cook for another 2-3 minutes until the sauce has thickened.
- Serve the stir fry over steamed rice for a complete meal.
