Exotic Szechuan Seafood Stir-Fry

Ingredients:

  • 500 grams Large Shrimps
  • 300 grams Squid
  • 300 grams Scallops
  • 3 tablespoons Vegetable Oil
  • 1 tablespoon Fresh Ginger, Minced
  • 3 cloves Garlic, Minced
  • 2 pieces Red Chillies, Finely Chopped
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Rice Wine (or substitute with dry sherry)
  • 1 tablespoon Fish Sauce
  • 1 teaspoon Szechuan Peppercorn, Crushed
  • 2 pieces Spring Onions, Chopped

Instructions:

  1. Clean, peel, and devein the shrimp. Clean the squid and cut into rings. Pat dry the scallops.
  2. Heat oil in a wok over high heat. Once hot, add in the ginger, garlic, and red chillies. Stir-fry until fragrant.
  3. Add in the shrimp, squid, and scallops. Cook for about 3-5 minutes, until the seafood is cooked through.
  4. Pour in the soy sauce, rice wine, and fish sauce. Stir well to combine and ensure all the seafood is coated.
  5. Add in the crushed Szechuan peppercorn. Stir well to distribute the peppercorn throughout.
  6. Serve hot, sprinkled with the chopped spring onions on top.
