
Exotic Szechuan Seafood Stir-Fry

Ingredients:
- 500 grams Large Shrimps
- 300 grams Squid
- 300 grams Scallops
- 3 tablespoons Vegetable Oil
- 1 tablespoon Fresh Ginger, Minced
- 3 cloves Garlic, Minced
- 2 pieces Red Chillies, Finely Chopped
- 2 tablespoons Soy Sauce
- 2 tablespoons Rice Wine (or substitute with dry sherry)
- 1 tablespoon Fish Sauce
- 1 teaspoon Szechuan Peppercorn, Crushed
- 2 pieces Spring Onions, Chopped
Instructions:
- Clean, peel, and devein the shrimp. Clean the squid and cut into rings. Pat dry the scallops.
- Heat oil in a wok over high heat. Once hot, add in the ginger, garlic, and red chillies. Stir-fry until fragrant.
- Add in the shrimp, squid, and scallops. Cook for about 3-5 minutes, until the seafood is cooked through.
- Pour in the soy sauce, rice wine, and fish sauce. Stir well to combine and ensure all the seafood is coated.
- Add in the crushed Szechuan peppercorn. Stir well to distribute the peppercorn throughout.
- Serve hot, sprinkled with the chopped spring onions on top.
