Exotic Szechuan Peppercorn Chicken

Ingredients:

  • 2 pieces Boneless Chicken Breast
  • 1 tablespoon Szechuan Peppercorns
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Sugar
  • 2 cloves Garlic
  • 1 inch Ginger
  • 2 stalks Spring Onions
  • 3-4 pieces Dry Red Chilies
  • 2 tablespoons Vegetable oil

Instructions:

  1. Begin by slicing the chicken breasts into thin slices. Set aside.
  2. In a frying pan, roast the Szechuan peppercorns until fragrant. Remove from heat and crush them lightly.
  3. In a bowl, prepare marinade using the crushed Szechuan peppercorns, soy sauce, sugar, minced garlic, and grated ginger.
  4. Marinate the chicken slices in this mixture for at least 15 minutes.
  5. Heat up vegetable oil in a wok. Fry the dry red chilies until they turn dark.
  6. Add marinated chicken slices into the wok and stir fry on high heat for 5-7 minutes until cooked.
