
Exotic Szechuan Peppercorn Chicken

Ingredients:
- 2 pieces Boneless Chicken Breast
- 1 tablespoon Szechuan Peppercorns
- 2 tablespoons Soy Sauce
- 1 teaspoon Sugar
- 2 cloves Garlic
- 1 inch Ginger
- 2 stalks Spring Onions
- 3-4 pieces Dry Red Chilies
- 2 tablespoons Vegetable oil
Instructions:
- Begin by slicing the chicken breasts into thin slices. Set aside.
- In a frying pan, roast the Szechuan peppercorns until fragrant. Remove from heat and crush them lightly.
- In a bowl, prepare marinade using the crushed Szechuan peppercorns, soy sauce, sugar, minced garlic, and grated ginger.
- Marinate the chicken slices in this mixture for at least 15 minutes.
- Heat up vegetable oil in a wok. Fry the dry red chilies until they turn dark.
- Add marinated chicken slices into the wok and stir fry on high heat for 5-7 minutes until cooked.
