
Exotic Spiced Egg Curry

Ingredients:
- 4 whole eggs
- 1 large onion
- 2 medium tomatoes
- 2 whole green chilies
- 1 tablespoon ginger garlic paste
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- 1 cup coconut milk
- a handful mint leaves
- to taste salt
- 2 tablespoon oil
Instructions:
- Boil the eggs for 10 minutes, peel them and keep aside.
- Heat oil in a pan, add the finely chopped onions and saute until golden brown.
- Add the ginger garlic paste and saute for a minute until the raw smell goes away.
- Add the chopped tomatoes and green chilies, and cook until the tomatoes are mushy.
- Add the spice powders (coriander, turmeric, red chili, and garam masala) and salt, mix well.
- Add the coconut milk and bring it to a boil.
- Add the boiled eggs and simmer for a few minutes until the flavors are absorbed.
- Sprinkle some freshly chopped mint leaves before serving with hot naan or rice.
