Exotic Spiced Egg Curry

Ingredients:

  • 4 whole eggs
  • 1 large onion
  • 2 medium tomatoes
  • 2 whole green chilies
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala powder
  • 1 cup coconut milk
  • a handful mint leaves
  • to taste salt
  • 2 tablespoon oil

Instructions:

  1. Boil the eggs for 10 minutes, peel them and keep aside.
  2. Heat oil in a pan, add the finely chopped onions and saute until golden brown.
  3. Add the ginger garlic paste and saute for a minute until the raw smell goes away.
  4. Add the chopped tomatoes and green chilies, and cook until the tomatoes are mushy.
  5. Add the spice powders (coriander, turmeric, red chili, and garam masala) and salt, mix well.
  6. Add the coconut milk and bring it to a boil.
  7. Add the boiled eggs and simmer for a few minutes until the flavors are absorbed.
  8. Sprinkle some freshly chopped mint leaves before serving with hot naan or rice.
