Exotic Smoked Gator Ribs

Ingredients:
- 2 pounds Alligator ribs
- 1/2 cup BBQ spice rub
- 1 cup Apple cider vinegar
- 1 cup BBQ sauce
- 1 bag Apple wood chips for smoking
Instructions:
- 1. Preheat your smoker to 225 degrees Fahrenheit and add apple wood chips.
- 2. While the smoker is preheating, rub the alligator ribs generously with the BBQ spice rub.
- 3. Place the ribs in the smoker and cook for about 3 hours, or until the meat is tender and has reached an internal temperature of 165 degrees Fahrenheit.
- 4. While the ribs are cooking, mix together the apple cider vinegar and BBQ sauce in a small saucepan over low heat. Keep warm until the ribs are ready.
- 5. Once the ribs are done, remove them from the smoker and let rest for about 10 minutes.
- 6. Brush the ribs with the warm BBQ sauce and vinegar mixture, then serve.
