
Exotic Shrimp and Grits Breakfast Bowl

Ingredients:
- 1 pound weight Shrimp
- 1 cup Quick cooking grits
- 4 cups Water
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 tablespoons Butter
- 1 cup Cheddar cheese
- 4 stalks Green onions
- 2 cloves Garlic
- 1 whole Lemon
- 4 slices Bacon
- 1 tablespoon Exotic spice mix
Instructions:
- Start by rinsing the shrimp and patting them dry. Sprinkle with half the exotic spice mix and let sit for 10 minutes.
- In a large pot, bring the water to a boil. Add the grits and salt, then reduce the heat to low and cover. Simmer for 5-7 minutes, stirring occasionally, until the grits are thick and creamy.
- Remove from heat and stir in the butter and cheese until well combined. Set aside and keep warm.
- In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside.
- In the same skillet, add the shrimp and cook for 2-3 minutes on each side until pink and cooked through. Remove and set aside.
- Add the sliced green onions and minced garlic to the skillet and cook for about 3 minutes until fragrant. Add the rest of the exotic spice mix and the juice of the lemon. Stir to combine.
- To serve, divide the grits among the bowls, top with the shrimp, bacon, and onion mixture. Drizzle the leftover sauce from the skillet on top. Enjoy your exotic and delicious breakfast!
