Exotic Shrimp and Grits Breakfast Bowl

Ingredients:

  • 1 pound weight Shrimp
  • 1 cup Quick cooking grits
  • 4 cups Water
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Butter
  • 1 cup Cheddar cheese
  • 4 stalks Green onions
  • 2 cloves Garlic
  • 1 whole Lemon
  • 4 slices Bacon
  • 1 tablespoon Exotic spice mix

Instructions:

  1. Start by rinsing the shrimp and patting them dry. Sprinkle with half the exotic spice mix and let sit for 10 minutes.
  2. In a large pot, bring the water to a boil. Add the grits and salt, then reduce the heat to low and cover. Simmer for 5-7 minutes, stirring occasionally, until the grits are thick and creamy.
  3. Remove from heat and stir in the butter and cheese until well combined. Set aside and keep warm.
  4. In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside.
  5. In the same skillet, add the shrimp and cook for 2-3 minutes on each side until pink and cooked through. Remove and set aside.
  6. Add the sliced green onions and minced garlic to the skillet and cook for about 3 minutes until fragrant. Add the rest of the exotic spice mix and the juice of the lemon. Stir to combine.
  7. To serve, divide the grits among the bowls, top with the shrimp, bacon, and onion mixture. Drizzle the leftover sauce from the skillet on top. Enjoy your exotic and delicious breakfast!
