Exotic Seafood Gumbo

Ingredients:

  • 1 tablespoon butter
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 1 cup celery, chopped
  • 4 cloves garlic, minced
  • 0.5 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup andouille sausage, sliced
  • 2 bay leaves
  • 0.5 teaspoon thyme
  • 1 cup crab meat
  • 1 pound shrimp, peeled and deveined
  • 1 pint oysters
  • 1 tablespoon Tabasco sauce
  • to taste salt and pepper

Instructions:

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the onions, peppers, and celery, and cook until softened.
  3. 3. Add the garlic and cook for another 1-2 minutes.
  4. 4. Stir in the flour to make a roux, and cook until the mixture is golden brown.
  5. 5. Gradually add the chicken broth to the pot, stirring constantly.
  6. 6. Add the sausage, bay leaves, and thyme to the pot, and bring the mixture to a boil.
  7. 7. Reduce the heat and let the gumbo simmer for about an hour.
  8. 8. Add the crab meat, shrimp, and oysters to the pot, and cook for another 10-15 minutes, until the seafood is cooked through.
  9. 9. Stir in the Tabasco sauce, and season the gumbo with salt and pepper to taste.
  10. 10. Serve the gumbo hot, with a side of steamed rice.
