Exotic Seafood Gumbo

Ingredients:
- 1 tablespoon butter
- 1 cup onion, chopped
- 1 cup bell pepper, chopped
- 1 cup celery, chopped
- 4 cloves garlic, minced
- 0.5 cup all-purpose flour
- 4 cups chicken broth
- 1 cup andouille sausage, sliced
- 2 bay leaves
- 0.5 teaspoon thyme
- 1 cup crab meat
- 1 pound shrimp, peeled and deveined
- 1 pint oysters
- 1 tablespoon Tabasco sauce
- to taste salt and pepper
Instructions:
- 1. In a large pot, melt the butter over medium heat.
- 2. Add the onions, peppers, and celery, and cook until softened.
- 3. Add the garlic and cook for another 1-2 minutes.
- 4. Stir in the flour to make a roux, and cook until the mixture is golden brown.
- 5. Gradually add the chicken broth to the pot, stirring constantly.
- 6. Add the sausage, bay leaves, and thyme to the pot, and bring the mixture to a boil.
- 7. Reduce the heat and let the gumbo simmer for about an hour.
- 8. Add the crab meat, shrimp, and oysters to the pot, and cook for another 10-15 minutes, until the seafood is cooked through.
- 9. Stir in the Tabasco sauce, and season the gumbo with salt and pepper to taste.
- 10. Serve the gumbo hot, with a side of steamed rice.
