Exotic Seafood Congee

Ingredients:

  • 1 cup long grain rice
  • 6 cups water
  • 15 pieces whole shrimp
  • 2 cups mixed seafood (such as octopus, squid, mussels)
  • 2 slices ginger
  • 1 tablespoon soy sauce
  • 2 sticks green onions, chopped
  • 1/2 teaspoon black pepper

Instructions:

  1. Wash the rice thoroughly and drain.
  2. In a large pot, add the rice, water, and ginger. Bring to a boil.
  3. Reduce to a simmer, cover the pot, and let it cook for about 1 hour, stirring occasionally, until you achieve a porridge-like consistency.
  4. While the rice is cooking, clean and prepare the seafood.
  5. Add the seafood, soy sauce, and black pepper to the pot. Cook for another 10 minutes or until the seafood is cooked through.
  6. Serve the congee in bowls, garnish with green onions. Your Exotic Seafood Congee is ready to eat!
