
Exotic Seafood Congee

Ingredients:
- 1 cup long grain rice
- 6 cups water
- 15 pieces whole shrimp
- 2 cups mixed seafood (such as octopus, squid, mussels)
- 2 slices ginger
- 1 tablespoon soy sauce
- 2 sticks green onions, chopped
- 1/2 teaspoon black pepper
Instructions:
- Wash the rice thoroughly and drain.
- In a large pot, add the rice, water, and ginger. Bring to a boil.
- Reduce to a simmer, cover the pot, and let it cook for about 1 hour, stirring occasionally, until you achieve a porridge-like consistency.
- While the rice is cooking, clean and prepare the seafood.
- Add the seafood, soy sauce, and black pepper to the pot. Cook for another 10 minutes or until the seafood is cooked through.
- Serve the congee in bowls, garnish with green onions. Your Exotic Seafood Congee is ready to eat!
