
Exotic Santa Fe Egg Skillet

Ingredients:
- 4 whole Eggs
- 2 tbsp Olive oil
- 1 whole, sliced Red bell pepper
- 1 whole, sliced Yellow bell pepper
- 1 tsp Smoked paprika
- 2 whole, sliced Chorizo sausages
- 1 drained and rinsed Can of black beans
- 1 drained Can of corn
- 1 cup, shredded Monterey Jack cheese
- 0.5 cup Salsa verde
- handful chopped Fresh cilantro leaves
- 1 sliced Avocado
Instructions:
- Preheat the oven to 375 degrees Fahrenheit.
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the bell peppers and cook until softened.
- Stir in the smoked paprika and chorizo sausages. Cook until the sausages are browned.
- Add the black beans and corn to the skillet and stir well to combine.
- Make four wells in the mixture and crack an egg into each well. Sprinkle the cheese over the top.
- Place the skillet in the oven and bake until the eggs are cooked to your liking and the cheese has melted.
- Remove from the oven and drizzle with the salsa verde. Top with the chopped cilantro and sliced avocado before serving.
