Exotic Ratatouille

Ingredients:

  • 1 medium Eggplant
  • 3 tbsp Capers
  • 2 cloves Garlic
  • 2 large Bell Pepper
  • 2 large Tomatoes
  • 2 medium Yellow Squash
  • 2 medium Zucchini
  • 1 medium Red Onion
  • 2 tbsp Olive Oil
  • 1 tbsp Red Wine Vinegar
  • 3 sprigs Fresh Basil
  • 2 sprigs Fresh Thyme
  • to taste Salt and Pepper

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Chop the eggplant, bell peppers, tomatoes, yellow squash, zucchini, and red onion into bite-sized pieces.
  3. In a large mixing bowl, combine the vegetables, garlic, and capers. Drizzle with olive oil and red wine vinegar, then season with salt and pepper. Toss to evenly coat.
  4. Transfer the vegetable mixture to a deep baking dish. Tuck in sprigs of fresh basil and thyme amongst the vegetables.
  5. Cover the dish with aluminum foil and bake for 45 minutes, stirring at the halfway point.
  6. Once vegetables are tender and lightly browned, remove from oven and let cool for a minute or two before serving.
  7. Serve the ratatouille as a snack, or as an accompaniment to a main French dish.
