
Exotic Ratatouille

Ingredients:
- 1 medium Eggplant
- 3 tbsp Capers
- 2 cloves Garlic
- 2 large Bell Pepper
- 2 large Tomatoes
- 2 medium Yellow Squash
- 2 medium Zucchini
- 1 medium Red Onion
- 2 tbsp Olive Oil
- 1 tbsp Red Wine Vinegar
- 3 sprigs Fresh Basil
- 2 sprigs Fresh Thyme
- to taste Salt and Pepper
Instructions:
- Preheat the oven to 375 degrees Fahrenheit.
- Chop the eggplant, bell peppers, tomatoes, yellow squash, zucchini, and red onion into bite-sized pieces.
- In a large mixing bowl, combine the vegetables, garlic, and capers. Drizzle with olive oil and red wine vinegar, then season with salt and pepper. Toss to evenly coat.
- Transfer the vegetable mixture to a deep baking dish. Tuck in sprigs of fresh basil and thyme amongst the vegetables.
- Cover the dish with aluminum foil and bake for 45 minutes, stirring at the halfway point.
- Once vegetables are tender and lightly browned, remove from oven and let cool for a minute or two before serving.
- Serve the ratatouille as a snack, or as an accompaniment to a main French dish.
