Exotic Prawn Biriyani

Ingredients:

  • 2 cups Basmati Rice
  • 500 grams Prawns
  • 2 Onion
  • 2 Tomato
  • 2 Green chillies
  • 2 teaspoons Ginger garlic paste
  • 2 teaspoons Red chilli powder
  • 0.5 teaspoon Turmeric
  • 1 teaspoon Garam masala
  • 1 teaspoon Exotic spices (cardamom, cloves, cinnamon)
  • to taste Salt
  • 3 tablespoons Oil
  • 1 handful Mint leaves
  • 1 handful Coriander leaves

Instructions:

  1. Wash the rice and soak it in water for 30 minutes.
  2. Heat oil in a pan, add the exotic spices and sauté for a few seconds.
  3. Add the finely chopped onions, green chillies and sauté till onions turn golden brown.
  4. Add ginger garlic paste, tomatoes and sauté till tomatoes turn mushy.
  5. Add the prawns, chilli powder, turmeric, garam masala and salt. Cook it till the prawns turn pink.
  6. Drain the rice and add it to the pan. Sauté for a few seconds.
  7. Add water (double the quantity of rice), cover the pan and cook on medium heat till rice is cooked.
  8. Garnish with finely chopped mint and coriander leaves.
  9. Serve it hot.
