Exotic Prawn Biriyani

Ingredients:
- 2 cups Basmati Rice
- 500 grams Prawns
- 2 Onion
- 2 Tomato
- 2 Green chillies
- 2 teaspoons Ginger garlic paste
- 2 teaspoons Red chilli powder
- 0.5 teaspoon Turmeric
- 1 teaspoon Garam masala
- 1 teaspoon Exotic spices (cardamom, cloves, cinnamon)
- to taste Salt
- 3 tablespoons Oil
- 1 handful Mint leaves
- 1 handful Coriander leaves
Instructions:
- Wash the rice and soak it in water for 30 minutes.
- Heat oil in a pan, add the exotic spices and sauté for a few seconds.
- Add the finely chopped onions, green chillies and sauté till onions turn golden brown.
- Add ginger garlic paste, tomatoes and sauté till tomatoes turn mushy.
- Add the prawns, chilli powder, turmeric, garam masala and salt. Cook it till the prawns turn pink.
- Drain the rice and add it to the pan. Sauté for a few seconds.
- Add water (double the quantity of rice), cover the pan and cook on medium heat till rice is cooked.
- Garnish with finely chopped mint and coriander leaves.
- Serve it hot.
