
Exotic Pineapple Pork Breakfast Tacos

Ingredients:
- 2 cups Pulled pork
- 1 cup Canned pineapple chunks
- 1 small Red onion
- 2 pieces Jalapeno
- To taste Cilantro
- To taste Sour cream
- 8 pieces Small tortillas
- 1 piece Lime
Instructions:
- Drain the can of pineapple, keeping the juice for another use if desired.
- Dice the red onion and jalapenos. Be careful with the jalapenos, as they can be spicy. If you want a milder taste, remove the seeds before dicing.
- Heat a large saute pan over medium-high heat. Add the pulled pork and pineapple chunks, cooking until they are heated through and the pineapple is starting to caramelize. This should take about 5-7 minutes.
- Warm the tortillas in a dry skillet over medium heat. This should only take a minute or two on each side.
- Assemble your tacos! Add a generous helping of the pork and pineapple mixture to each tortilla.
- Top with diced red onion, jalapeno, a sprinkle of cilantro, and a dollop of sour cream. Squeeze a slice of lime over the top for an extra burst of flavor.
- Serve immediately and enjoy your exotic breakfast!
