Exotic Pineapple Chicken

Ingredients:

  • 4 pieces Chicken breasts
  • 1 whole Pineapple
  • 1/2 cup Soy sauce
  • 1/3 cup Brown sugar
  • 3 pieces Garlic cloves
  • 1 inch piece Ginger
  • 1 teaspoon Red chili flakes
  • 1 cup Coconut milk
  • 2 stalks Green onions
  • Handful Coriander leaves
  • To taste Salt and pepper

Instructions:

  1. Start by cutting the pineapple in half lengthwise. Scoop out the flesh of the pineapple and cut it into bite-sized pieces, set aside.
  2. In a bowl, combine the soy sauce, brown sugar, minced garlic, grated ginger, and red chili flakes to create the marinade.
  3. Marinate the chicken breasts in the mixture for at least 20 minutes.
  4. Preheat your oven to 375F (190C).
  5. Place the marinated chicken in the hollowed-out pineapple halves. Pour the remaining marinade and coconut milk over the chicken.
  6. Bake in the oven for about 1 hour, or until the chicken is cooked through and has reached an internal temperature of 165F (74C).
  7. Garnish with chopped green onions and coriander leaves before serving.
