Exotic Pineapple Chicken

Ingredients:
- 4 pieces Chicken breasts
- 1 whole Pineapple
- 1/2 cup Soy sauce
- 1/3 cup Brown sugar
- 3 pieces Garlic cloves
- 1 inch piece Ginger
- 1 teaspoon Red chili flakes
- 1 cup Coconut milk
- 2 stalks Green onions
- Handful Coriander leaves
- To taste Salt and pepper
Instructions:
- Start by cutting the pineapple in half lengthwise. Scoop out the flesh of the pineapple and cut it into bite-sized pieces, set aside.
- In a bowl, combine the soy sauce, brown sugar, minced garlic, grated ginger, and red chili flakes to create the marinade.
- Marinate the chicken breasts in the mixture for at least 20 minutes.
- Preheat your oven to 375F (190C).
- Place the marinated chicken in the hollowed-out pineapple halves. Pour the remaining marinade and coconut milk over the chicken.
- Bake in the oven for about 1 hour, or until the chicken is cooked through and has reached an internal temperature of 165F (74C).
- Garnish with chopped green onions and coriander leaves before serving.
