
Exotic Midnight Vegetable Stir-fry

Ingredients:
- 2 cups Mixed vegetables (carrot, bell peppers, broccoli, snap peas)
- 5-6 Dried Shitake mushrooms
- 3 tablespoons Soy sauce
- 1 can Coconut milk
- 2 cloves Garlic
- 1 inch piece Ginger
- 2 tablespoons Sesame oil
- a handful Cilantro for garnish
Instructions:
- Soak the dried mushrooms in hot water for 10 minutes, then slice into thin strips.
- Heat the sesame oil in a large wok or frying pan over medium heat.
- Add the finely chopped garlic and grated ginger to the pan and cook until fragrant.
- Add the mixed vegetables to the pan and stir fry for 5-7 minutes, until the vegetables are just beginning to soften.
- Add the rehydrated and sliced shitake mushrooms to the pan and stir to combine.
- Pour in the coconut milk and soy sauce, stir again to combine, and bring the mixture to a simmer.
- Simmer for 5 minutes until the sauce has slightly thickened.
- Garnish with fresh cilantro before serving.
