Exotic Midnight Vegetable Stir-fry

Ingredients:

  • 2 cups Mixed vegetables (carrot, bell peppers, broccoli, snap peas)
  • 5-6 Dried Shitake mushrooms
  • 3 tablespoons Soy sauce
  • 1 can Coconut milk
  • 2 cloves Garlic
  • 1 inch piece Ginger
  • 2 tablespoons Sesame oil
  • a handful Cilantro for garnish

Instructions:

  1. Soak the dried mushrooms in hot water for 10 minutes, then slice into thin strips.
  2. Heat the sesame oil in a large wok or frying pan over medium heat.
  3. Add the finely chopped garlic and grated ginger to the pan and cook until fragrant.
  4. Add the mixed vegetables to the pan and stir fry for 5-7 minutes, until the vegetables are just beginning to soften.
  5. Add the rehydrated and sliced shitake mushrooms to the pan and stir to combine.
  6. Pour in the coconut milk and soy sauce, stir again to combine, and bring the mixture to a simmer.
  7. Simmer for 5 minutes until the sauce has slightly thickened.
  8. Garnish with fresh cilantro before serving.
